I’m having so much fun creating new recipes to stay within my healthy guidelines and still keep our meals interesting. A girl can only eat so much baked chicken and broccoli. So, last night I tried this new recipe of turkey tacos but substituted the tortilla/taco shell for some butter lettuce. The recipe is listed down below:
1 pound of ground turkey
1 head of butter lettuce
1/4 cup of mild pico de gallo
1/4 shredded monterey jack cheese
2 tsp. ground cumin
2 tsp. chili powder
1/4 tsp. onion powder
1/4 cup of water
salt and pepper
Cook ground turkey in a medium saucepan over medium high heat. Once meat is all browned, drain off extra pan drippings. Lower heat to low and add in cumin, chili powder, onion powder, and water. Combine all ingredients and let simmer until all water has evaporated.
Break off leaves from your head of butter lettuce (be careful not to rip the middle of the leaves). Spoon a small amount of turkey on to your lettuce and top with desired toppings. I added a bit of pico de gallo, cheese, and a dollop of salsa. Fold it like a taco and enjoy!
No guilt from all the extra calories and it’s enough to fill you up! I had 3 small tacos and it was just enough. Kelly was happy and said I should definitely make it again.
